Here is a recipe that’s to die for, everyone will love this dish. And this meal is full of great nutrition and it’s low in calories which makes it great for active spring days. Plus this dish will also fill a person up and keep them going. And it also contains forbidden rice (also known as black rice) which is full of antioxidants. This vegan dish is a full spectrum meal which is good for every part of the body.
4 - Medium Size Organic Chayote Squash - Either white or green either will work, boil them until tender, cut them in half, then remove 3/4 of the inner flesh and cut the flesh into large chunks. Keep the shell for stuffing later. Or instead of boiling the squash can be baked.
4 - Large Organic Potatoes - Baked and Cut into Chunks
2 - Cups of Organic Kale - Chopped and Sautéed
1/2 - Cup of Finely Grated Organic Carrots to add to the rice.
1 - Medium Organic Yellow Onion Chopped
1 - Tablespoon of Organic Garlic Powder
4 - Cloves of Organic Garlic - Minced
Filtered Water to Cook the Rice just like brown rice - but instead of using all water substitute 1/2 organic veggie stock.
2 - Cups of Organic Forbidden Rice or Black Rice cooked with onions, garlic, the carrots, 1 tablespoon of organic garlic powder, 4 cloves of organic minced garlic, and veggie broth and salt and pepper. And you can also add any kind of seasoning here such as Italian, Mexican, Curry Powder, whatever your heart desires. If you can’t find black rice brown rice will also work well.
1 - Large Organic Tomato Sliced
1 - Large Organic Cucumber Sliced
Bed of Organic Butter Lettuce
(Optional) Add some hot sauce to the rice for a little bit of spice.
(Optional) Add some veggie cheese on top - just a tiny bit, but make sure it doesn’t contain any casein.
A little bit of organic olive oil to spray the pan to sauté the onions and garlic.
Take the rice and cook as normal but with 1/2 organic veggie stock, and add the sautéed onions, garlic, garlic powder, grated carrots, and any seasoning you want to add in addition to what we have here and cook the rice just like normal brown rice.
Take the cooked rice and tenderly mix in the chunks of chayote, potato, and sautéed kale. Now refill the chayote shells and add the hot sauce and or veggie cheese now if you like… and pop in the oven at 350 degrees for 12 minutes. Just enough to reheat everything so you can serve it. Place the warm chayote half on a bed of butter lettuce and garnish with a slice of tomato and cucumber— that’s it!

Health Benefits of Organic Chayote Squash
Chayote is a relatively new veggie in the US that comes from Middle and South America. Chayote has a wonderful mild flavor and has many health benefits, and the whole plant including the leaves and the roots are edible. And chayote was a staple food for the Aztec Indians for hundreds of years.
Where it Grows – Chayote or Sechium edulie originally came from Mexico, Costa Rica, Brazil and other countries in Middle and South America. But now they grow in the US, the Caribbean, Hawaii, Asia, Vietnam, India, Australia and New Zealand and other places around the world.
Other Names for Chayote – Chayote is also called Merliton throughout the Southern States and is well known in Cajun cooking. Also, chayote is called Choko, SuSu, Guatila, Pear Squash, Pipinola, Is-Kush, Dashkush, and many more names around the world.
Taste – Chayote has a flavor that’s similar to a cucumber and potato and really picks up most of its flavor from whatever it’s cooked with. And it makes a great salad with a nice light crisp flavor like cucumber.
Growing – Chayote can be somewhat finicky to grow but once it gets started it takes off and climbs all over. Chayote likes climbing fences and wires and produces wrinkled white or green fruits that have a soft seed inside that is also edible. Just taking and planting one of the whole chayote fruits in the ground will start this plant. And it loves lots of sun and a fair amount of water, but not too much.
Always Eat Organic Chayote – Regular chayote can contain up to 6 cancer causing agents, 12 hormone-disrupting agents and more chemicals which cause havoc with the body. Always buy organic chayote or grow your own organic chayote and be healthy.

Greens for salads, shoots can be used like green beans, fruits for salads and cooking, and the potato like roots are also nutritious. Plant a few chayote around the house and stay healthy.
