“Great with a Dipping Sauce and they Make Wonderful Appetizers”
“And this recipe makes a tasty and healthy alternative to chicken nuggets”
Here is a simple way to make a wonderful crunchy side dish with leftover organic brown rice and cornmeal. Together with a nice dipping sauce, these golden nuggets are wonderful. These nuggets will fill you up and get you going and provide lots of energy and nutrition. Plus they are very simple to make and even the kids will love them.
3 - Cups of Organic Brown Rice - Cooked
3 - Cups of Organic Corn Meal - Cooked
Salt — use sparingly but this recipe needs some salt.
Just a tiny bit of spray olive oil for the pan.
These patties can be made many ways - sweet, savory with veggies, and garlicky.
For the sweet patties add a 2 or 3 - tablespoons of organic agave nectar or honey.
For the savory patties add 3/4 cup of chopped organic chives and red bell pepper.
For garlicky patties add 6 minced cloves of organic garlic
Add the cooked brown rice with the warm cornmeal and the extra ingredient you want to add and mix well and make 2-inch patties. Then spray a cast iron skillet with a little olive oil and brown the patties on both sides.
Or sparingly spray each patty on both sides and use an air-frier and air fry your patties until nice and golden brown. I use the 400 degrees setting on my air-fryer for about 15 minutes… this will vary depending upon your air-fryer.
These patties end up being very crisp on the outside with a chewy interior which is a wonderful contrast in textures.
For a dipping sauce use, any organic fat-free whole foods plant-based salad dressing, or salsa, or any other whole foods plant based dipping sauce. And organic guacamole is also nice.
And they work great for parties and can be topped with any kind of whole foods plant based topping to make great appetizers.
Serves - 10 people - or 3 hungry guys.
Who needs unhealthy chicken nuggets when you can have these tasty treats :)
Health Benefits of Organic Corn Meal
The truth is organic corn can be an important source of lots of great nutrients and a great part of a healthy diet. The Native Americans such as the Aztecs, Incas, and other tribes thrived on corn, and it sustained them during the hard times. Short Chain Fatty Acids – Corn contains a large amount of Short Chain Fatty Acids which help to prevent colon disease and cancer.
Great Fiber for Probiotics – Corn contains lots of fiber which is important for providing a good environment for the growth of probiotic bacteria which boosts up our immune system. One cup of corn contains about 4.6 grams of fiber making it high fiber food. And corn fiber also helps to prevent cardiovascular disease, strokes, cancer, and constipation.
Good Fats – Corn does contain fat, but most of that fat is unsaturated good fats which are important for great health.
Protein – 1 cup of organic corn contains about 5 grams of protein, making corn a nice source of protein.
Prevents Macular Degeneration – Corn contains zeaxanthin and lutein which help to prevent macular degeneration.
Lowers Blood Pressure – Corn may also be able to lower blood pressure by preventing angiotensin-I converting enzyme from being produced… more studies to be done.
Lowers Blood Sugar – Consuming 1 or 2 cups of whole corn daily has been shown to stabilize blood sugar levels for those with type 1 and 2 diabetes… more than likely due to the high fiber content of the corn.
Inhibits Some Viruses – Corn contains lectins and those lectins bind with viruses and thus inhibiting the growth of certain viral agents.
Types of Corn – There are many different types of corn including white, yellow, blue, red, purple, and even black types of corn.
Low in Sugar – The average ear of corn contains less calories than a large apple and only has about 1/4 the sugar content, making corn a healthy food.
Eating Corn Linked to Long Life – Lots of cultures that live to be very old incorporate whole organic corn into their diet.
Corn is Low in Calories – The average ear of corn on the cob has less calories than a large apple. Most people think that corn is fattening… but that’s not true, it’s just all the butter and oil that we put on corn that makes it high in calories.
